Cookies with berries
Original recipe from Russian Gastronom Book, Recipes for Beginners.
These cookies can be made with different berries, fresh or dried, blackberries, currants, pitted cherries, cranberries or blueberries. You can also use chopped up apples and pears or dried fruit.
1.5 cup blackberries or blueberries
1 full cup flower
1 cup dark brown sugar
3 tbsp butter
100 full fat sour cream
1 teaspoon vanilla flavored sugar
1 teaspoon baking powder
1 teaspoon peppercorns
Pinch of salt
Icing sugar to sprinkle
Crush the pepper with vanilla sugar in a mortar as finely possible is smaller. Sift the flour with salt, add brown sugar, and mix well. Add butter cut to cubes and chop everything with two knives until the mixture turns into crumbs. Take one cup of the crumbs and pour into a rectangular baking dish. Even out the surface with your hands.
Add baking powder, sour cream, lightly beaten eggs with crushed pepper and vanilla sugar to the remaining crumbs, mix, add berries and mix one more time. Pour the mixture into the baking dish on top of the first layer. Bake in the oven heated to 180 degrees for 35 – 40 minutes. Cool, cut into squares and serve sprinkled with icing sugar.
